PEMANFAATAN TEKNOLOGI SEPARASI MEMBRAN DALAM PEMBUATAN KONSENTRAT AIR KELAPA
Abstract
Telah dilakukan penelitian tentang pemanfaatan teknologi separasi membran dalam pembuatan konsentrat air kelapa. Tahapan penelitian yang dilakukan dalam pembuatan konsentrat air kelapa yaitu pengumpulan bahan baku yang merupakan hasil samping industri pengolahan tepung kelapa, uji coba peralatan untuk mendapatkan tekanan optimum yang akan digunakan dalam penelitian, dan pembuatan konsentrat air kelapa dengan teknologi separasi membran. Membran filter yang digunakan yaitu membran RO dengan theoritical working pressure: low pressure (225 psi); ultra low pressure (150 psi); ultra low pressure (100 psi). Bahan baku dan produk konsentrat air kelapa yang diperoleh kemudian diuji pH, total padatan terlarut (oBrix), indeks bias, kandungan mineral (K, Mg, Fe, Na, Ca), lemak (%), mikrobiologi (ALT). Produk konsentrat air kelapa yang diperoleh memiliki ph = 4,60-4,63; Total padatan terlarut = 9,90-10,05 °Brix; Indeks bias = 1,3480; Kalsium=198,59-244,73 ppm; Magnesium = 113,87-125,08 ppm; Besi = 30,21-31,52 ppm; Natrium = 442,36-473,77 ppm, Kalium = 0,43-0,46 %; Lemak = 0,11-0,13 %; Mikrobiologi (ALT) = 1,12 x 106–1,52 x 106 cfu/ml.
